We’ve Been Eating… Purple Carrots!
We recently received a few bunches of purple, yes purple, carrots in our Abel and Cole veg boxes. How fantastic!
Before this I’d only ever eaten orange carrots. I read that orange carrots are actually quite a recent thing. Back in the day everyone would have been eating purple carrots and would have found orange ones as bizarre as I find the purple variety!
Although they are called ‘purple’, they are actually still orange on the inside. This two tone colour makes for a colourful attractive display on the plate. To me they taste just like ‘regular’ orange carrots, but they have a few slightly different properties. The purple colour is caused by something called anthocyanins, and they are really, really good for you.
Here are a few health benefits of antioxidants called anthocyanins found in purple carrots:
- Strong anti-inflammatory effects, possibly even stronger than aspirin!
- Great for eyes – including enhanced night vision and increased circulation in capillaries in the retina
- Improved memory
- Anti carcinogenic properties by protecting the body from free radicals
Have you tried purple carrots? I think I’m going to try and grow some next year as they are meant to be even easier than growing orange carrots, which are pretty easy anyway!
